  1.                    MEXICALI CHEDDAR BEAN SALAD

  4. 16 oz. black beans
  5. 16 oz. kidney beans
  6. 16 oz. navy or great northern beans
  7. 1 small chopped red pepper
  8. 3/4 c. chunky salsa
  9. 1/2 c. green onion slices
  10. 2 T. cilantro (opt.)
  11. 6 oz. (1-1/2 c.) shredded cheddar cheese
  12. lettuce
  13.  
  14.           Rinse and drain beans.  Mix together all ingredients
  15. except cheese and lettuce.  Chill.  Toss with cheese before
  16. serving.  Serve on lettuce lined plates.  Makes 6 servings.
